Easy Crispy Chicken Ranch Salad

Coming at ya with a super quick and easy lunch or dinner recipe. This came about one day when I decided to whip up a super simple salad for lunch and top it with one of my chicken cutlets that I have been making for years! When I create a meal, I try my best to make sure that it has a healthy balance of fats, carbs, proteins, AND veggies. I find that this winning combo keeps me full and away from mindless snacking.

Dress It Up Dressing sent over a few of their bottles a little bit ago and I absolutely fell IN LOVE with their Ranch! It is super clean (as clean as Ranch can be) and tastes so much better than traditionally packaged Ranch dressings. It is creamy and so flavorful! Growing up in Jersey, I literally put ranch on EVERYTHING: chicken, sandwiches, salads, and even PIZZA (seriously, try it and thank me later). It has been my holy grail dressing for as long as I can remember, and I still treat myself to it once in a while!

This spinach salad is SUPER easy to make, especially once you have the chicken and chickpeas prepped. You can heat it up throughout the week, or eat it cold, and regardless, it tastes amazing with the dressing. I like to add in some couscous to add in some healthy and filling carbs. This salad would also be amazing with tomatoes, but sadly I was out.

Roasted Chickpeas-

Ingredients:
-1 small can chickpeas, drained and rinsed
-1 tsp paprika
-1 tsp garlic powder
-1 tsp onion powder
-2 tsp sea salt
-1 tbsp olive oil
Directions:
-Preheat oven to 375
-Drain and rinse chickpeas, pat dry
-Drizzle oil on chickpeas and toss in seasonings
-Bake for 20-25 minutes, tossing occasionally
-Let cool

Crispy Panko-Crusted Chicken-

Ingredients:
-2 chicken breasts
-1/2 c. panko breadcrumbs
-1 egg, whisked
-1 tsp parsley
-1 tsp garlic powder
-1 tsp sea salt
-1/4 cup avocado oil
Directions:
-In a medium skillet, heat oil on medium heat
-In a bowl, combine spices and panko breadcrumbs
-In a another small bowl, whisk one egg
-Dip chicken breasts in egg and directly coat in panko mixture
-Cook chicken in heated skillet until golden brown on each side
-Finish in the oven @ 375 degrees for about 9 minutes (could be more or less depending on the size of your chicken breasts)

Salad-

Ingredients:
-Baby Spinach
-Couscous- cook by directions on box
-Cherry Tomatoes (optional)
-Chickpeas
-Chicken Breast
-Dress It Up Dressing – Ranch
Directions:
-Assemble salad as desired
